Ingredients
- 1 cup chopped yellow onion
- 1 cup chopped carrot
- 1 pound chicken breasts, cubed
- 4 medium-sized yellow potatoes
- 3 cloves of garlic
- 1 cup of fresh spinach
- 4 cups chicken or vegetable stock
- 2 cups pureed pumpkin
- 1 cup milk
- Fresh herbs like cilantro, parsley, green onions for serving
Instructions
- Heat some oil in a pot and throw in the carrots and onions, cook for 3-5 minutes
- Season the chicken with a pinch of salt and pepper
- Add the chicken and garlic and cook for 3-5 minutes
- Add in the potatoes and the chicken stock and bring to a simmer, cook for 10 minutes
- Add the pureed pumpkin, milk, and spinach and cook for 5 more minutes
- If you want the soup to be extra creamy, remove one cup from the pot and blend in a blender, or blend a little bit with an immersion blender

ADD MILK TO GET CONSISTENCY
If your soup got thickens up, you may add a little bit of milk to get your desired consistency.
