Ingredients
  

  • 1 cup chopped yellow onion
  • 1 cup chopped carrot
  • 1 pound chicken breasts, cubed
  • 4 medium-sized yellow potatoes
  • 3 cloves of garlic
  • 1 cup of fresh spinach
  • 4 cups chicken or vegetable stock
  • 2 cups pureed pumpkin
  • 1 cup milk
  • Fresh herbs like cilantro, parsley, green onions for serving

Instructions
 

  • Heat some oil in a pot and throw in the carrots and onions, cook for 3-5 minutes
  • Season the chicken with a pinch of salt and pepper

  • Add the chicken and garlic and cook for 3-5 minutes 
  • Add in the potatoes and the chicken stock and bring to a simmer, cook for 10 minutes

  • Add the pureed pumpkin, milk, and spinach and cook for 5 more minutes
  • If you want the soup to be extra creamy, remove one cup from the pot and blend in a blender, or blend a little bit with an immersion blender
  • Serve with some fresh herbs and enjoy

TIPS AND TRICKS

ADD MILK TO GET CONSISTENCY

If your soup got thickens up, you may add a little bit of milk to get your desired consistency. 

MILK

You may also use almond or coconut milk as per your requirement. 

GARNISH

Garnish the soup with lemon and pieces of avocado along with cilantro, parsley, and green onions. 

CRUNCH

The soup tastes more perfect if it combines with a bit of crunch. 

For adding crunch- Cut tortilla and chicken into wedges or strips, brush them with olive oil, sprinkle a little bit with salt and pepper, and sauté them until they get a brown and crispy texture. Add them into hot soup and enjoy!

EXTRA-HEALTHY

For making it extra healthy, you may also add small pieces of broccoli, peas, and corn. It will become healthy pumpkin chicken soup. 

STORE

You may store soup in the freezer in a container or zip-lock bag for future meals. We recommend storing soup without extra toppings. At the time of serving, top the soup with fresh crunchy toppings.

How to cut down chicken breast into cubes? 

You may prepare chicken breast cubes by using these two methods. I recommend you prepare it ahead of time. 

SLOW COOKER

Cook chicken breast in a slow cooker on a medium flame for at least 2-3 hours. After cooling the chicken at room temperature, cut down the chicken breast into small cubes. 

BOIL CHICKEN BREAST

Boil chicken breast in a pan of boiling water or broth and let it boil on high flame for 5-7 minutes and then on low flame for 15 minutes. Let it cool down and cut it into small cubes. 

CAN WE FREEZE CHICKEN PUMPKIN SOUP?

You can prepare soup in a large batch and easily store it in the freezer in some air-tight container for a maximum of 2 months. Thaw it for 4-5 hours in the refrigerator and then heat it up before serving. 

HOW TO REHEAT CHICKEN FROZEN PUMPKIN SOUP?

Thaw soup for 6-7 hours in the refrigerator and then reheat it over low flame and let it boil for 2 minutes. You may add milk of your choice to get your desired consistency and top it with your favorite toppings. It is ready to serve.
